Sweet Potato Tater Tot Casserole


This sweet potato tater tot casserole is cozy, flavorful, and family-friendly. It’s made with real ingredients and simple steps for a satisfying weeknight meal even the kiddos at my house gobble right up!

  • Great for meal prep: This can be prepared up to the baking process and stored in the fridge or freezer until you’re ready to bake! Aka a meal planners dream.

Ingredients Needed

  • Ground beef: I’ve tested this recipe with ground chicken and it was also delicious!
  • All-purpose seasoning: Choose your own adventure here! Hailing from the midwest, I love the flavor of Lawry’s. 
  • Red bell pepper: Any color bell pepper will work, but I love the color that a red bell pepper adds. 
  • Tomato paste: The tomato paste will coat the beef, onion and bell pepper and help thicken up the casserole base. 
  • Garlic cloves: A little garlic goes a long way in the flavor department!
  • White onion: Feel free to substitute for a yellow onion if you prefer that flavor.
  • Frozen vegetables: I use one bag of mixed veggies, and an additional cup of frozen peas.  
  • All-purpose flour: This will thicken the sauce in the beef and veggie mixture. 
  • Beef broth: I love the flavor of beef broth, but chicken broth or veggie broth will also work. 
  • Sweet potato tater tots: I like the Alexia brand, but any brand will work! Feeling adventurous? Try my homemade sweet potato tater tots recipe.

How to Make Sweet Potato Tater Tot Casserole

  1. Sauté the onion and garlic: Heat olive oil in a cast-iron skillet, and add the onion and a pinch of salt. Sauté until the onions are translucent. Add garlic and sauté for a bit more. 
  2. Add the ground beef: Add the beef and season with all-purpose seasoning. Cook the ground beef until cooked through.
  3. Add the bell pepper and tomato paste: Add both and toss to combine. Cook until the tomato paste has coated all of the ingredients. 
  4. Add the remaining ingredients: Add the frozen vegetables, peas, flour, broth, and additional salt to the cast-iron and toss to coat all of the ingredients. 
  5. Add the sweet potato tots: Line the top of the casserole with sweet potato tater tots in a fun design. 
  6. Bake and enjoy: Bake until the edges of the pie begin to bubble and the sweet potato tots begin to brown.

Flavor Twists & Simple Swaps

Tater tots: This recipe obviously calls for sweet potato tots, but you can use any tater tot you’d like.

Ground meat: Feel free to substitute for ground turkey, ground chicken or even a plant-based ground. My vegetarian friends love using a plant-based ground for this casserole.

Veggies: Any frozen veggies will work for this recipe! I love using a veggie mix to get a variety of colors and flavors, but you do you. Edamame would even be delish as an added protein boost.

How to Serve

I love serving this sweet potato tater tot casserole right out of the skillet, placing in the middle of the table and letting everyone serve themselves. Make sure you get some of the filling and some of the tots in every serving.

Storage, Make-Ahead & Reheating

If you have any leftovers, cover your skillet with foil and store it in the fridge for up to 3 days.

To reheat, cover the skillet with foil and bake at 350ºF for about 20 minutes or until heated through.

To make ahead: Prepare this tater tot casserole up to step 4 in the recipe card. Store in the fridge for 1 day or in the freezer for up to 3 months.

When ready to cook, allow the frozen tater tot casserole to thaw in the fridge overnight before baking according to recipe instructions. Enjoy!

  • Preheat the oven to 375ºF. Heat olive oil in a 12-inch cast-iron skillet*. Add the onion and season with ¼ teaspoon salt. Sauté over medium heat for 3-4 minutes. Add garlic and saute for an additional minute.

  • Next, add the ground beef and season with all-purpose seasoning. Cook the ground beef until cooked through. Add the bell pepper and tomato paste and toss. Cook for an additional 2-3 minutes or until the tomato paste has coated all of the ingredients.

  • Bake for 20-25 minutes or until the edges of the pie begin to bubble and the sweet potato tots begin to brown.

  • Many sizes of cast-iron pans would work; it will just dictate how thick the casserole is.
  • Alexia sweet potato tater tots come in 20 oz. bags, and you’ll need approximately 25 oz. of sweet potato tater tots for this recipe. I recommend buying 2 bags of Alexia sweet potato tater tots, and you’ll have leftovers for another time.
